Chicken Tikka Masala

Saag is a term used commonly in Punjab’s northern region for any leafy green vegetable dish, as well as in many neighboring regions such as Bengal and Assam in the east. Pureed spinach and tender, juicy chunks of lamb are combined with aromatic spices such as cumin, cardamom, coriander seeds, ginger, and garlic to make one of the most popular Indian food dishes, lamb saag. The inclusion of cream or yogurt gives it its trademark creaminess.
Mughlai chicken, like most Northern cuisine, is a rich dish high on the cream, so save it for a special occasion. It’s made with ghee (clarified butter) and chicken thighs, with cumin, coriander, bay leaves, garlic, green cardamom, and cinnamon sticks as the standard spice mix. The origins of this recipe can be traced back to northern India. It’s made with paneer (farmer’s cheese) and peas in a delicious tomato sauce that’s spiced with garam masala.
